The Introduction to Baking and Desserts course

is an 8-week culinary programme that contains the following 2 credit bearing units:

Baking Fundamentals: Bread, Cakes and Pastries

This module aims to provide learners with the knowledge and skills required to produce cakes, pastries and breads in a commercial kitchen following standard recipes. Learn to select, prepare and portion ingredients, as well how to use relevant equipment in a range of cookery methods to make and decorate cakes, pastries and breads, and their related food storage methods. The content of this module applies to hospitality and catering organisations that produce and serve cakes, pastries and breads, including hotels, restaurants and patisseries.

Dessert Preparation

This module aims to provide learners with the knowledge and skills required to prepare, cook, freeze, decorate, portion and present or store hot, cold and iced desserts and to recognise the importance of applying correct hygiene and safety procedures to produce a quality product for service. The type of ingredients used to prepare desserts and how they are stored will also be covered.  

Dates: 6th May to 27th June, 2024*

Timings: 8.30am -12pm. Monday – Thursday

Course Duration: 8 weeks

*includes all learning materials, registration with MOE, Certification, and a Chefs jacket.

Sally Handoko

Sally Handoko, is DCTs Chef Instructor for Baking and Patisserie. She has a wealth of experience having worked in many 5-star luxury hotels; Four Seasons Jakarta, Fairmont Dubai, and JW Marriot Hotel and as an Executive Pastry Chef in Conrad Dubai. Prior to joining DCT, she worked as an instructor with ICCA, International Centre for Culinary Arts in Dubai. Sally’s other great passion in life after pastry, is keeping fit and she is a keen kickboxer.
